Many people use the term second cousin but someone informed me that this was this was incorrect so what is correct

The relationship is second cousins. You would be first cousin, once removed to your parent's cousins, and second cousin to the children.

3rd cousins or just cousin. Who cares how far away of a cousin they are they are still your kin.
