CIAO is a "jolly" greeting...
It's the english for "Hi" or "Hello", but also for "Bye bye"...
It's very friendly, so it's used with people you know (your friends, your relatives)... at every time!
SALVE means "Hi", but it's less confident than "Ciao" and it's used with people you know, but not very well (for example your baker...). Buongiorno or Buonasera are more used than Salve...
ARRIVEDERCI is "bye bye" and it's polite... used in the streets, in the shops...

I have heard Ciao (pronounced "chow" like "chow mein" ) can mean hi and bye, and arrivederci (ah-ree-veh-dairch-ee) means goodbye for sure. That's about all I remember from studying Italian and Italian pronunciation 11 years ago for a singing class.

Yes, "ciao" means both hello and goodbye, but "arrivederci" would be better translated as "until we meet again" so it is used in more formal circumstances.
