Voice recognition works in most office environments. Voice recognition is even used in some military applications (see: http://www.audible-computing.com/75001.htm ).
But with Klingons firing photon torpedos and whatnot, it can become pretty crazy in the bridge. That's why there are buttons. For those situations in which voice recognition may fail under the duress of combat. It should be noted that Captain Kirk does use verbal communication to give orders to the officers on the bridge. So, they are using voice recognition to some extent.

It takes some practice to get the timing just right. There is a few millisecond delay while the computer processes your speech. That delay could spell doom in a gun fight.
