For those who do not know these Greatest Men born on the Earth a few details:

Sri Adi Guru Sankaracharya:
Adi Shankara (Ādi Śankara);
Devanagiri आदि शंकर; also known as Śankara, Ādi Śankarācārya (the first Śankara in his lineage), Śankara Bhagavatpādācārya (the teacher at the feet of the Lord) (c. 8th century CE, see below) was a Hindu philosopher, who had a profound influence on the growth of Hinduism through his philosophy of Advaita Vedanta (IAST advaita vedānta; Devanagari अद्वैत वेदान्त; IPA [ədvaitə vé:dα:ntə]). He advocated the greatness and importance of the Hindu scriptures, the Veda (most particularly the Upaninshads), spoke to a spirituality founded on śāstra (scriptures) and anubhāva (experience), and aided by karmas (spiritual practices), and gave new life to Hinduism at a time when Buddhism and Jainism were gaining popularity. Swami Vivekananda:

Swami Vivekananda (whose pre-monastic name was Narendranath Dutta (January 12, 1863 - July 4, 1902) is considered one of the most famous and influential spiritual leaders of the Vedanta philosophy and is considered by millions of Indians as well as non-Indians as a Messenger of God (like Buddha, Jesus, etc.) [citation needed]. He was the chief disciple of Ramakrishna Paramahamsa and was the founder of Ramakrishna Math and Ramakrishna Mission. Many consider him an icon for his fearless courage, his positive exhortations to the youth, his broad outlook on social problems, and countless lectures and discourses on Vedanta philosophy.

It's because these great Acharyas know that the flesh is weak and hence they work in the Plance of Superconcious state only in which the Mahatmas are able to move freely from anywhere at anytime and help their devotees and desciples.

Of course, the work on the Earthly plane requires certain amount of time and hence they kept their bodies alive for a short span and completed their mission of Life spreading the Wisdom of Love and Freedom to the entire humanity.

As soon as the mission is over they left their bodies.

In Swami Vivekananda's words:

I will have to be born again because I fell in love with man.

So these greatest souls born again and again and the mortals to realize their Infinite Self or also called Athman in Sanskrit.

Not always/ Vivekananda died because he was chronic charas addict and diabetic, which was not controlled. Not sure about Shankaracharya.
Many such great live very looong. Like Gandhi, Tagore etc. Your generalisation is based on prejudices rather than facts.
