To identify a "noble crime" would involve two things, presumably. First, we would need to know how you were performing the act. That is, perhaps some types of robbery are more noble than others--you are providing for the safety of your victims, etc. Second, we would need to know your motive. That is, perhaps those who steal because their children are starving have done something more "noble" than the person who steals simply for fun or profit. Those seem to be the two primary factors that might lead us to call a crime "noble."
Since method and intent are involved, I'm not sure there is a definitive answer that can be given. Perhaps the answer is that many different crimes might be seen as "noble" if they are done in the right way and for the right reason.
However, that doesn't make them good.

Take the "Do not remove!" tags off mattress and box spring sets then cunningly weave them into an artist expression of your criminal fury. Exhibit this ill gotten medium, sell it; donate the proceeds (less what you need for getting around of course) to a registered charity. Repeat as often as necessary. Repent in the end and write a tell all book about your criminal endeavours. You'll be cooler then Moby! A noble crime indeed.

Standing up against an establishment wrong is definitely noble, and often criminal too. Make enough noise, and maybe you could sell the story to a paper, or write a book.
You could take on the burmese regime, or prehaps Zimbabwe, or one of the increasingly oppressive laws in the west.
In the UK it's now illegal to protest outside parliament, for instance.

There are only 2 noble crimes that I can think of for you.
Make the rich poor. Take money away from the people who use money as a shield for morals. The White House is a great start if you're a professional. But if you are starting small, damage as many SUV's as you can as well as other flashy cars.
Invent something for weed that can't be found nor detected by dogs or cops.

There is no point to stealing from the rich and giving to the poor these days. They need to be more independent and be able to make better use of what they have around them than what we did with it (Social Enteupenuering). Breaking the law in order for justice is a good idea. But who can escape the law??

Crime in itself is not noble, even robin the hood recognized that the good part was what he did with the money, not how he got it...
The ends justify the means is a slippery slope to travel on...try getting a job!

Protest something. Get a big placard, send out press releases beforehand so that you get media coverage, then make a general nuisance of yourself in the name of a good cause. Fame, glory, a disturbance of the peace and the potential for arrest.

Pumping money into expired parking meters so the man doesn't get it. But, you said you wanted to profit too? I would say then that when the person who owned the car came out of (wherever) you could tell them they owe you for the price of the meter plus one million percent interest.
