All in one! Have one restaurant serves all type of cuisines with facilities of dine-in, drive-thru and delivery service. People now are spoil by choices and damn lazy to actually go out to dine!

The problem in Singapore is that there are so many different kinds of good food. Any restaurant that is opened will face stiff competition. I think I'd open an American diner-style restaurant. Keeping prices low would be the key to getting locals to try the food. Catering to the corporate / embassy crowd would help. But the food needs to be outstanding.
The other option would be open a franchise of something like Taco Bell, which I don't think is in Singapore.

I think the issue shouldn't be about looking for something different. Because if you really do find something different and go for it, you are actually putting yourself in more risk than needed. First of all, you're taking a risk already starting your own restaurant business. Second you're starting a new thing that the public hasn't heard of before and to be fair you don't know what the public's reception will be like. So two huge risks.
I suggest trying something that works and improve on it. Hopefully you would have worked hard on your business and generated enough profit for you to finally try that new and different thing you always wanted. But who knows, maybe you might find that your new thing won't be well received because you've been in the business for awhile now.

Well something different than the usual Mexican/Italian/Chinese, etc. Don't get me wrong, they all are wonderful, I'm just saying add something different to the table so to speak.
Like food from Jamaica, Hawaii, South Africa, France to name a few. Have a variety that will have people coming back for more.
Now as far as a restaurant try South African. I think that would be very different in terms of food choices/entrees and should definitely give off a different flavor for the taste buds.

I think a Themed Restaurant would be neat. For example whatever the theme have the food to match the theme or era.
Western - barbecue recipes and menus
Island - tropical recipes and menus
Country Atmosphere - basic simple recipes
Antique - quaint and unique recipes and menus
Cartoon - burgers and steaks
Good Luck, it's a tough business but with the right location, atmosphere, appeal and good food you can make it a success.

I think that might be the last business i would start, i think the competition is too tight. there isn't anything that isnt already done and if you choose something that's already out there yours has to be the best and with the best prices, maybe you should reconsider your investment or your future!
