"the Penny Game"
where you have ten or so pennies and you hide them all around the house (usually the first floor) and the person to find the most gets to hide them. Or you can take turns doing the hiding.
"Hide-and-Seek"
Play like normal but don't hide yourself to hard.
"Any Card Game"
You can play Go Fish or any other game that they know of.

Just let the kids take the lead.. ask them what they want to play. If they come up with a game you don't know of, let them teach you the rules and what not.

Hide and seek. I Spy. Chutes and Ladders. Make a game up with a Nerf Ball. Duck, Duck, GOOSE!

And remember, while you are babysitting you are not just watching the kids...you become their surrogate parent. What you do with them will become part of them. Try to make the games you play a learning experience. One of the biggest lessons they can learn by playing games is that some times they win and some times they lose.

Make a treasure hunt. So you start out with a sheet of stuff they have to find. Then go around the house or yard or park and find them. Stuff like an empty toilet paper roll, a piece of paper, for the 3 year old you can make a sheet with pictures on it. Then when they find all the items they make a craft with them
So basically the treasures are each pieces of the craft.
Example making binoculars:
2 toilet paper rolls
Empty little box (like match box)
Piece of string
markers

Their interests might be different. The 8 year old may or may not want to play with the other two. But the suggestions here are your best bets.

As somebody else already suggested, I was thinking "I spy" for the three-year-old.

Maybe "Scissors, Paper, Rock"? All the kids might be able to play that one.

Drawing pictures is a good idea, too.

Play freeze dance. It will tire them out and they have loads of fun dancing and you have loads of fun giggling at them.

Play music, when the music starts they start dancing (make sure you leave it on for a while) then when you quickly lower the sound they are to freeze.

The person who moves is automatically out.

The person who wins is the next person to control the music!
