how do i deal with a mother in law that always talks behind peoples backs?

YOU cannot change a insecure person. Most people who degrade other's are insecure and are very jealous. The best thing to do for her is pray that some day she grows up and get's some self esteem so that other's are not intimidated by her to get her to degrade them. It's not you that has the problem. The only problem with you is that you married the son. Which means he too has been infected with the insecure. Good Luck.
