if you like less intense rides:

viking boat ride (Norway)

the fireworks show is very good
and some great restaurants at the many countries

I can't remember what country it is (i think it's one of the island countries, it may be japan) but there is a neat outdoor drum show. It's pretty cool to watch. Also, if you're of age hit the British pub (Roses I think) and get fish and chips and a pint of strongbow. Good stuff.
