I would think it's something like what Emerson said, maybe something related to the fact that maybe your blood goes to one side of your body after a while??

If we didn't toss and turn our skin would begin to die. That is why older people can get "bed sores". We have receptors in our skin that tell us to adjust whenever the epithelial portion of our skin starts to breakdown. This is why you can't sit in one position for too long.

When we toss and turn before we sleep, sometimes it is because we just can't find a comfortable position to sleep in. Sometimes, there are just a lot of things on our minds and our minds can't shut down yet because we're thinking too much. Sometimes, we toss and and turn because we are stressed out from too much work, school, or some distressing event.

When we toss and turn when we sleep, sometimes we are just experiencing a vivid dream that feels real, maybe a nightmare. Sometimes, we are just half-asleep, not fully asleep, because we are under stress. Sometimes, it is just our brain telling the body to move itself so that when we wake up, some parts of our body aren't sore from being laid on for many hours.

We toss and turn in our sleep, because our muscles get tired of being in the same position for a very long time. If we didn't toss and turn in our sleep our you would see sores, and creases made by the sheets and pillow covers all over our body, this would happen because our body is pressed against the bed for so long, and so to prevent any cellular damage we toss and turn in our sleep.

When we sleep it's in a cycle. We start off sleeping light and continue to sleep deeper into five stages. Then it repeats itself from the begining. I think when they cycle starts over is when we toss and turn.
