Well, he lives in a secluded area in the desert, and ACME is the only company who delivers to his area, so he is forced to continue to use their products. And it's possible that the stuff isn't defective, it's just that Wile isn't very good at putting it together. As for eating the roadrunner, he may not have much meat on him, but look at how skinny Wile is! He needs all he can get, and in the desert there isn't much choice in food.

I think the coyote probably at first wanted to eat the roadrunner, but after he tried and failed so many times, all he really wants is to catch it and kill it. It is an accomplishment thing! If he catches and kills the roadrunner, then he has accomplished one of the toughest things he ever faced in his animated life.
By the way, on the Family Guy cartoon, the coyote gets Peter to run over the roadrunner. So according to the Family Guy, the coyote already caught and killed the roadrunner. With Peters help but he got him, finally!

Acme has a monopoly over the dynamite /rocket launcher/ trapping supplies industry. I don't know why he goes after the roadrunner, but peacocks don't have much meat on them and they are supposed to be an excellent eat, so maybe roadrunner is a delicacy also.

Good Question! Maybe Acme is the only company that sells exploding bird feed or rocket boots. They have a monopoly on the insane coyote market!
Here's a counter question. Since he has enough $ to buy all these gadgets, why doesn't he just go to a nice restaurant instead of chasing that boney bird around?

He has a credit account with them ... it makes things easier for a wild coyote to purchase genius level technology from a corporation that will sell to just about anybody ... besides, if you pruchase enough gadgets from them, you get a free Roadrunner vaporizer ... the incentives alone are amazing

so that they could all continue to recieve a paycheck. And maybe we just think, along with him, that he wants to eat the roadrunner. I think, that by now, he just wants to beat the roadrunner. Anyway, I didn't see very many telephone booths in the desert, so maybe Warner Bros. just gave them the first lisiting, on line one, with no options. And maybe "MEEP-MEEP sounds like MEAT-MEAT, how do we know the roadrunner doesn't lisp?

He buys from Acme because he is bound to them by a self renewing contract designed at the beginning of his career. This contract is iron-clad and is in no way breakable no matter what injuries or personal damage is sustained by Mr. Coyote.
As far as why he wishes to catch road-runner, I think that road-runner taunted him as a child and caused him great emotional stress causing Wiley great emotional stress and thus pitting him against road-runner for the rest of his life. He seeks only to satisfy his eternal need to gain revenge for the years of taunting he suffered through.
OK now the easy answers. He buys from Acme just because it is bloody funny to see him crash and get squashed and thrown off of cliffs ll the time.
He chases road-runner just because the cartoonist willed it and thought that it was eternally funny for Mr. Coyote to forever chase an uncatchable prey. Even more funny when they put Bugs in theref or one or the other of the characters.
