If it all changes into gas, it will still go the usual way, Nuclear fusion, heavier elements, again solids.
The Earth's temperature has raised abnormally, the forests are disappearing, animals are getting extinct at a breakneck rate.

1: Both, first we expand, then all mass having gravity, even the finite gravity of disburst gasses, will all eventually find each other, the fate of the universe is still most likely a "Big Crunch" regardless of the stat of matter.
2: Absolutely. This one fact proves God exists, be He hairy thunderer or Cosmic Muffin. Man Can Neither Create or Destroy Earth. The entire industrial era has not contributed even a fraction of the "harm" one single volcano can do in seconds.

1. If everything were changed into a gas that had no kinetic energy related to it, nothing would happen. It would take the formation of particles moving against particles in order to begin forming the heat energy necessary to form a gravitational field.
Were the gas converted into its lowest energy form that we think of, it would become electromagnetic energy. Our universe would have at that time become one-dimensional. This gives evidence that it is one-dimensional at present, but our preception is that of three dimensions.
2. Your observation concerning man creating anything is correct. The universe has been created with a particular order that gives us the ability to use energy transfer that is beneficial to ourselves. The concept of entropy, says that it all is running down. Mankind can't wind it up, he can only unwind it.

You've asked two extremely different questions.
The first is this: gravity will not change if the total mass does not change.
Volume, however, will increase as solid and liquid becomes gas.
Man does not change nature, but can affect the ecosystem. The ecosystem, however, will act to correct itself. Thus global warming causes greater storm activity, leading to more lightning, creating more ozone, replacing the ozone in the atmosphere. The storms may become often and violent enough to eventually destroy mankind.

for the first one i think the universe still goes on expanding even if all the solids and gases are converted into gases due to the force of the big bang.after that eventually everything will come back to the point of origin.
for second one you are correct that changing is the law of nature.but we are adding to it dont u think.we are doing things that damaging everything.
think when nature wants to destroy things it goes for floods, quakes etc.effecting the only part it wants.but whereas humans we throw a nuclear bomb on that place effecting everything in that place.so we accelerate the change.

You are only talking about an altered state and since mass will not change gravity won't change either.

The universe is mostly empty space.
A tiny bit less of it would be empty.
