She was used for breeding and now we can't get her to socialize with us. How do we get her comfortable with us so we can hold her?

Maybe if you put on a Sonic suit and roll around the house with her.
Ok, seriously, you could try to get another hedgehog, become affectionate with it and then she might follow suit. Other than that it's probably going to be very difficult, because it sounds like she's just not interested in humans.

Get another hedgehog. She wants contact with her own species
and since she is a breeder then she wants to be around other
hedgehogs.

Hedgehogs are really not the best pets for holding.
They are not ever really firendly they will tollerate being held but perfer to be on the ground wandering around.
If you hold them alot when they are young they will tolerate it better.
