Because if you turn it on it's side (N) it stands for Nap.
Actually, I researched it a bit. A gentleman by the name of Winsor McCay used z's in his comic strip to depict sleeping. This was in the early 1900's.

No clue. In Japan, the symbol for sleeping is a cartoon bubble coming out of the nose. I guess it's just one of those things that someone started, and it happened to stick.
