Guinness but in reality it is Irish stew, love the stuff.
To make it you stew the spuds (potatoes) for half a day with the meet. You let it cool over night, heat it up again and add the veg and simmer for another short time, it is not uncommon for some people to add a bit of Guinness.

Irish Stew
Servings: 6
2 tb Oil
4 lg Onion cut in wedges
5 lg Carrots cut in thick slices
1 1/2 lb Round steak or lamb
6 lg Potatoes
1 c Water
Salt and pepper to taste
Heat oil in large saucepan or skillet. Saute onions in oil. Add carrots and cook for a few minutes. Cut steak into 1/4 to 1/2 inch cubes and add to onions & carrots. Wash, peel and slice potatoes and add to pot. Pour in water, season to taste with sat & pepper and bring to a boil. Skim of any foam, reduce heat and simmmer over low heat until meat and vegetables are tender. If desired, stew can be thickened by mixing 2 tablespoon flour with a little water and adding it to the stew. Heat through until thickened and serve piping hot.

Soda Bread
Servings: 1
6 cups Flour
1 teaspoon Baking soda
3 teaspoons Baking powder
1 teaspoons Salt
1 quart Buttermilk
Mix all the dry ingredients in a LARGE bowl. Mix in buttermilk. It helps to use your hands to mix this because the dough is sticky DON'T USE AN ELECTRIC MIXER or the bread comes out flat. Divide batter into two buttered cake pans. Flour a knife and cut a cross into the tops of each. Bake at 350oF for about an hour. The top should not be allowed to get to brown.

Shepard's pie would be one of our national dishes, we're also famous for our black and white pudding (which I love) that comes with our full Irish breakfast. Stew and coddle are a couple more...we dont have a lot of national dishes compared to, say the Italians but the ones we do have are really good.

I live in Eire so i think i should be able to able you!
Although irish stew is a favourite, and so are salt beef, cabbage, potatoes with white sauce, each region has its own specialities.
In Dublin it's called coddle, sausages stewed with potatoes and onions, and where i live (On the West coast) it's boxty! Boxty is made with potatoes, flour and eggs, turned into a dough that is refrigerated then sliced and fried. it goes very well with sausages, bacon, black and white pudding, eggs (Traditional irish breakfast in our parts). In other parts ... They do not use boxty but serve cooked breakfast with toast.
Wheaten bread and soda bread are used practically on a daily basis as well!
