There are 2 ways to look at it.
Scientifically:
Erections of the penis are caused by a sudden flow of blood to the penis due to sexual stimultion.
Lipids are stored in the adipose tissue in the human body. These adipose tissue surrounds the mesenteries. (membrane surrounding organs). If a person is excessively overweight, more lipids are stored and the adipose tissue becomes bigger, exerting pressure on the organ. Fats clogging up the blood vessels might also occur.
From the defination above, we can now see that the clogged up fats and adipose tissue exerting pressure both limits the blood flow to the penis, causing overweights to erect at a slower rate and therefore less likely.
Psychologically:
Sometimes, the scientific explanation might affect the person in his attitudes regarding his sex life. Besides that, a fat person might think he looks ugly, and shun away from people who consistently teases them about their size. When they are asked about their sex life, they either joke about it or play it down, saying that its fine/good. However, deep inside, they might be experiencing an emotional void, thinking that they are no good or that nobody wants/love them.
p.s. the psychological part applies to certain, not all obese people.

I'm 67 and went through the same thing as your husband but I found help with the aid of injection therapy. I have been using Caverject or Edex for over 10 years now and it has changed my sexual life. As soon as one gets over the assumption that sticking a needle in ones penis is very painful. On the contrary, you can hardly feel the injection. The erection it produces is very hard and lasts anywhere from 1 to 4 hours which makes sex very exciting once again not only for me, but also my wife. I know how a man feels when he has ED, and I also know how great it was to be able to perform once again like a teenager.

There can be psychological factors affecting erection dysfunction as well. Low self esteem and performance anxiety can take the life out of erections and overweight people often feel self loathing that affects their ability to feel good about body-sex-worthiness of love-sex. But they might be able to have erections and ejaculations "solo" with masturbation. If he can become erect with his dreams-sleep cycle and masturbation, then his erection problems are of a psycho-emotional nature. If he can't, then it is a medical problem that could be improved with major dietary and weight change, and of course the possibility of penile implants.
Also, many people don't realize that premature ejaculation can progress into impotency! Prevention of this is possible by not having "quickies" (by masturbation or with a partner). Sexual addiction with pornography can also aggravate these problems as well. Some men are addicted to porn (esp internet) and can not perform with a partner.
Increasing age can also affect-aggravate impotency, regardless of body composiion, but as humans of this era age there are many who are obese and-or diabetic and-or hypertensive and using antihypertensive drugs, many of these drugs can affect erections too.
Many answers possible here. Complex psychology and physiology surrounding impotency. Impotency is an "old-outdated" term too. It is said to be a degrading term, so the politically correct term is "erection dysfunction." Just like FRIGID is politically incorrect, degrading; term too for women is sexual dysfunction.

To factors mentioned by others, I add a reminder that penile erections are mediated by changes in penile blood flow. Cardiovascular disease may make them weak, or non- existant. Obese men are likely to have cardiovascular disease, with high blood cholesterol, and plaques, and atherosclerosis.
Remember that "Viagra" was being investigated as a drug for other aspects of cardiovascular disease, before its effect on penile erections was mentioned as a "side effect" by some subjects in the studies. This (presumably) explains why some of the others were not keen to stop taking them, even after there was observed to be little effect on their (other) troublesome symptoms of cardiovascular disease.

Overweight people are not as healthy and are less sexually active because of lack of exercise. Exercise increases hormone levels that influence our sexuality as well as helping to maintain overall body homeostasis. In men who are overweight, generally less testosterone and seratonin are produced. There are many chemicals that are involved in our sexuality. Exercise and diet helps to regulate them.

Most obese men also have secondary condition like Diabetes that make erection difficult. Furthermore obesity decreases testosterone level, so harder to achieve erection.
