As a result of the discovery of Neanderthals it was believed that Europeans originated in the Caucus mountains. This was before people knew that all humans' original ancestors were from Africa. Actually Caucasian is a completely dated and false classification. Europeans ancestors did not originate in the Caucus mountains. In fact, Indo Europeans (Germanic, Latin, Greek, Celtic, Baltic, Indian, Iranian, ect.) have no relation to the people of the Caucus mountains. Europeans, with the exception of Finns, Estonians, Basques, Hungarians, and a few others, speak Indo-European languages. These languages share a common ancestor, proto-Indo-European, with the Indian and Iranian languages. Thus, the people, or cultures at least, share a common origin. Since the people in the Caucus region do not speak an Indo-European language it should be obvious that Europeans (in the linguistic sense) are not Caucasian. The homeland for the Indo-European people is still not agreed upon, but the most popular theories are the Baltic or Northern Iran/Central Asia. Proto-Indo-European did exist, but its reconstruction is hypothetical. So you are right, European would be a much more correct term for Americans of European descent. Asian Americans are probably simply called "Asians" because they are relatively new to most parts of the country, whereas blacks/African Americans have been here as long as whites/European Americans. Another explanation could be that it is a convenient abbreviation. Most people simply describe European and African descended people as whites and blacks, however, the term yellow seems awkward to most people. There isn't really a convenient term for them and since their appearance is so foreign to other races, many people describe their appearance simply as "Asian", thus the adjective Asian is used to describe them. In formal situations Asian American is common for instance my college has classes called "The Asian American Experience".
