This is a tough question and I am wondering if you are taking a poll or want to know for your own purposes.
If you are just curious what people like - I would have to say the Alpujarra region in Spain is one of my favorite places. I like it because it is off the beaten path (although frequented by British tourists and Spainards visiting the mountains on week ends and vacations) and is still somewhat authentic and is beautiful. A close second is Italy. I've been to Venice 5x and can never tire of this city as it is so unusual, beautiful and romantic. I also like the Cinque Terre region and Tuscany. Positano is pretty nice too.
But ..... I also enjoy Portugal. Lisbon is an amazing city with its castle and the Alfama. And, the Algarve is very beautiful if you can look past all the high rise buildings.
Zermatt is also very special with it's car free village, alpine air and the Matterhorn.

It really depends on the person. I can't name just one, but here is a list of my favorites in no specific order:
Venice:
A beautiful city that is eminently walkable. Beautiful and historic sites throughout the city are just waiting to be found. You can lose yourself among the quaint alleys and streets and come upon antique merchants, glass blowers, and charming cafes at every turn. I had heard that the canals have an unpleasant odor, but I did not find this to be the case at all. Probably an urban myth.
Prague:
Prague is a beautfiul city. Like Venice, the charm of this city lies in its many alleys of merchants, restaurants, and artisans, especially around Old Town Square. Like many cities, Prague has some areas that have become a bit too touristy, but it is still a wonderful destination.
Santorini:
This Greek island is an amazing destination that offers a unique cityscape. Just walking through the streets of Oia which hangs precipitously on the edge of the caldera is an experience. Aside from exploring Oia and the wineries of Santorini, you can also swim in the caldera. The seawater within the caldera is naturally heated by the volcano, offering a hot-spring like experience in the ocean.
Vienna:
This historic city has so many sites to see that you can spend many days here. Aside from the incredible palaces and museums, the highlights I would recommend are the Vienna Boys Choir and the Spanish Riding School where you will see the famous Lipizzaner Stallions.
Having been to many European cities, these four are my favorite destinations. I hope this is helpful!

A European destination that must be visited for me is Malta. Malta is an archipelago in the Mediterranean sea 60 miles South of Sicily. Malta consist of two main islands that are Malta and Gozo. Between Malta and Gozo there is a small island of Comino. This country has a very old history. There are many Historical sites to see like the fortress city of Valletta which is the capital city, Mdina the old capital city and much more. Gozo has it own city Victoria wich is in the center of the island with it Citadel from which one can see the magority of the villages. The magority of the people of Malta know English and some know Italian, French and German.

Amsterdam was my favorite. But within Continental Europe, it's simple to do a driving loop from Amsterdam, Munich, Switzerland, over to the French Riviera, Barcelona, Madrid, back through Paris. It's not a great distance, and each place is so unique, I wouldn't want to miss any of them.

My choice would Venice. I can only imagine the romanticism of floating down one of canals with the one you love checking out the old architecture.If I could not go there it would have to be the British Ilse's with all the castles to visit with all that rich history to keep your mind jumping with one thought after another of the knights and the lovely women for whom they fought.
