Why are some cows white and others are black, spots etc?

It is their breeding and gentics. Certain breeds can only have certain colors. Sometimes these breeds crossbred and create new colors. The following website is great for finding information on breeds of cattle(for example a white or roan and black could create a blue roan.)

Thank God someone finally noticed there are different colored cows in the world other than Holsteins. Every ad that has a cow you see on every kind of media has a Holstein cow on it. I even heard some guy on T.V. say there was no such thing as a black cow. I have nothing against any breed of cow, it's just nice to know that someone finally noticed there was a difference. White cows are Charlois, Black cows could be Angus, Limousine, or Gelbvieh (all beef cows). Brown cows could be a Jersey (goldish tan) or Hereford (red-ish brown with a white face), black & white spotted Holstein. Black with a white face is a cross breed. There are many more breeds, but these are a few I am familiar with.

That has to do with their breed. There are different breeds of cattle just like there are different breeds of dogs, cats, and other animals. Cows are really female cattle; bulls are male cattle. An all black cattle is most likely Angus breed. All brown cattle are Jersey breed.
