I'd stopped watching the show long before that happend, but Edith was written out of the show via 'death by a stroke... apparently, her death was not shown in any episode, she kind of died 'off camera'.

Edith doesn't actually die in All in the Family. A spin-off/sequal of All in the Family, called "Archie Bunker's Place" starts with Archie being sad because Edith died in her sleep from a stroke.
One morning, he wakes up to find her dead in bed.

Actually, she died of a stroke before the name of the show was changed to Archie Bunker's Place (when Archie bought the bar Kelsey's). She got sick in the last episode of All in the Family when she was cooking all the food for St. Patrick's Day at the bar. The new spinoff/continuation show starts with them mourning her death of a stroke.

I believe they wrote her out as dieing in her sleep from a stroke.
Didn't they change the name of the show after that and Archie slept on the couch?

SHE NEVER DID ON ALL IN THE FAMILY.
IT WAS ARCHIE'S PLACE WHERE SHE DID NOT COME BACK TO THE SHOW SO THEY KILLED HER OFF.
