It depends - do you want a traditional wedding or a wacky Vegas one?
If you want the former I highly recommend a chapel at one of the hotels. Not only can they do everything for you (thus relieving a lot of the pressure) but they are easier all the way around in terms of access, services, amenities, and the like.
My personal favorites are the chapels at Mandalay Bay (brand new as of April - gorgeous!), Bellagio, The Venetian, and Paris Las Vegas.
If you want a more wacky Vegas wedding then definitely head to one of the independent chapels. Viva Las Vegas Wedding Chapel (1205 Las Vegas Blvd. S.) is not the fanciest place in town but they will do any theme wedding you can think of... seriously, from knights to Elvis to Star Trek and beyond.
I also like A Special Memory Chapel (800 S. Fourth St.), which is in a building that looks like a New England chapel and has a full range of services with a very attentive staff... oh, and a drive up window!!

My husband and I got married at the Chapel of the Bells. The chapel sends a limo to your hotel to pick you up, take you downtown to get your marriage license and to the chapel to get married. Afterwards, they drive you back to your hotel and that is all included. They have several packages available and it's really cute.

Red Rock Canyon is beautiful, so is the Valley of Fire and Lake Mead. All of the casinos have chapels that look nice.

My brother got married at the Forever Grand wedding chapel at the MGM....it was VERY nice.

There's an outdoor area at Caesar's that is beautiful! I saw it on Queer Eye for the Straight Guy.
