I would say a hillbilly is a rural (country or mountain) person, usually poor, who is hardly educated at all and doesn't know much culturally besides the environment they grew up in. Also, they are much more crude and do not follow the social norms of more "civilized" society. Interests include drinking, banjos, guns, pickup trucks, and confederate flags.
