Me and my wife watch some of these movies sometimes and those guys keep going, to me they seem to be going and going,

Ummm...the scene is shot over a number of days and weeks. When they switch camera angles, that shot was often filmed several days later.
Like any other type of film, they have several hours of footage that they splice together in whatever manner seems best.

It's called editing. They film it five times with multiple cameras and use the best of the footage to make one long sex scene..
