A phenomenal question. I've wondered this many times myself.

Without question they are cracked using machinery and I'm sure that just enough pressure is put on them to crack the shell but not the nut. Then the shells are sifted away leaving only nuts.

The other writer had a good idea about writing the companies who produce nuts but honestly, I don't think you'll get an immediate answer. Good luck.

They don't! A machine is used that extracts the nut from the shell and does the cracking for them! Since the machine is very precise, very few nuts are broken or smashed. If it is very important to you, why don't you write a letter to a major nut retailer, such as Planters or Diamond and ask them if they know? They will be more than happy to answer your question especially if it is a project for school. Have fun!
