If you are in a major city, go to a GOOD QUALITY gay restaraunt, have a nice meal,and then share a "Chocolate Orgasm" with him (the chocolate souffle type cake with hot chocolate in the middle that erupts when you pierce the crust with the fork.
Walk with him somewhere nice, just the two of you,talk about little things,and then read him a poem or a story (it doesn't have to be yours), at that point, let him take over and see where you end up.
And just holding hands is plenty for a first date.

Definitely coffee - always good to have a get out clause. If you don't know each other.
If you know him well enough to believe you'd like to start something (ie: more than just his looks and his being gay/bi) then a meal in a pleasant restaurant, a drink in a gay bar, a dance in gay club, a stroll back to his (or yours) and a kiss goodnight or an invitation inside...

Find out what he likes to do, look for something in common and then do it.... maybe a stroll on the beach, a quiet dinner for 2 in a cozy little place, a movie, a play.... there are so many options.

You can't really go wrong with dinner and a movie. Someone suggest coffee in case you two don't hit it off. I think that's a good idea. It can lead to some good places to go if it DOES work out!!! Have fun!!!!
