Pen because of the different colors and if you've ever kept a journal you will know that 10 years from now the writing will still be there. Pencil fades in time.

Pens... always. Pencil's tend to make my skin crawl if I hear it working on the parchment.

Definitely pens! I even do crossword puzzles and sudoku in ink.
