Shrink is not only shoplifting. Shrink is known loss, items that are to be thrown out due to damage, poor quality or overstock. This all goes against your bottom line. Ways of controlling shrink would be careful handling, watch for quality issues (if you're stocking something and notice inferior quality, send it back and get credit rather than attempt to sell it and end up shrinking it out), careful ordering, etc.

"Margin" roughly translates "Profit".
"Shrink" roughly translates "shoplifting".
The prospective employer wants you to be preventing shoplifting so that you can maximize company profits. Shoplifting cuts directly out of the profit.
