Comments below regarding Arlington seem accurate. Best places in Arlington are only chains. Examples...Saltgrass, Outback, Joe's Crab Shack, the aforementioned Pappadeaux, Fishbone mentioned below. I like Red, Hot & Blue and On The Border...but they're not unique to Arlington or unique in any way...just good food.
One unique Arlington place I like is Italian Villa, but it's all the way across town from Six Flags and a little hard to find.

There is a Chili's nearby. Across the highway (I-30) from Six Flags is a Sonic, Dickey's BBQ, Steak and Shake, a Chinese Buffet and Trail Dust Steakhouse. Down the street from SIx Flags and near the Ballpark is On the Border mexican food, Texas Land and Cattle, Joe's Crab Shack, Mexican Inn, Shady Oaks BBQ, Red Hot and Blue (Memphis style BBQ). There is a sports bar near Lincoln Square but I can't remember the name of it. Try the Fort Worth Star Telegram website, they have listings of Arlington restaurants.

Arlington? A unique atmosphere? Sorry, can't stand the town! Saltgrass Trail on Lamar just north of Six Flags is a great Steak. I agree Razoos or whatever is not that good. Even Fishbones on Collins and Randol Mill is better.

well right across the street you have a place called humperdinks. they have great food - think chilli's but a little more upscale and a much better food selection/ food quality.
if you're up for pasta - i suggest heading up the road to collins street to an outdoor strip called lincoln square. There's a place called birraporetti's there that has a great lasagna!
Also in that same strip is foddue place called simply fondue and they have a fantastic selection of wine.
and finally, if you really want cajun food, head down cooper street south till it intersects with I-20. right there across from the major mall called the parks mall, is a place called Razoo's. They have a fantastic creole dish and their drinks are awesome.

Saltgrass Steakhouse is one of the better chains for steaks - Pappaduex's is good for seafood, although I consider a bit pricey for a chain resturaunt. Unfortunately, that is one of the downfalls in this area - chain resturaunts are everywhere. Its very hard to find a decent independently owned place. Birrapontes is good Italian but I prefer Portafina's which is on the other side of Lincoln Square.

Arlington is a veritable wasteland of trashy places to eat. Humperdink's is okay but it is blue-collar and frat boy hang out. Guys take their dates to Humperdink's to impress them, which is scary. Razzoos isn't all that bad but it is still a chain and not a uniquely Arlington place. Same with Pappadeaux which I like better than Razzoo's but it is slightly more costly.

Go to TGI Fridays they have the best variety of foods and drinks too. I ate there when we went to six flags.
