Being in the book business, I can verify that there is no onsale-date/publishing date for this book as yet. The date 07/07/07 is a rumor only at this time.
Today’s (26 June 06) City Paper quotes J.K Rowling herself as stating:"I am feeling sad as it is the last one. But so far, so good." But when pressed on when the book would be ready for publication would only say "I'm doing well I think. You can never really tell till you get near the end. I am not quite there yet."

We don't know yet. But people are guessing that it will be July 7, 2007 (7/7/07) because it's the 7th book.

That hasn't been announced yet. If she follows previous patterns, she'll (J. K. Rowling) probably have it out by next summer, but since it's the last one, she might wait an extra year.
Does anyone have a link to where the July 7, 07 date came from?

I read somewhere that it is not coming out on 07/07/07 because it would screw up profits for the 5th movie.

I don't think there's an actual date, but they're hinting at sometime in July '07.
