I've always been told that they face the east so that when Christ returns their bodies will rise to meet him. That's probably why it started and people have just stuck to the tradition. But, I live in the bible belt so things may be different in other parts of the country.

Cemeteries are laid out on a grid pattern, for accuracy of grave location. The tombstones are placed parallel to the street so that they can be easily read. It would make sense for the grid to be N/S, E/W, and there is probably a standard plan, as there is for streets in newer cities.

No they do not all face east or west. My fathers faces south, my brother's faces north-west. I'm not sure why they would all have to face east or west though...

I know the person faces east, or is supposed to. The reason for this is so they can be ressurected to face Jesus when he comes from the east.
