Burn 'em.
There are people who use a modified Manure injector to burn the ground. Basically a gas-torch and cooking the topsoil. Will need serious care to get the topsoil 'back to life' after that.
Dig out every root by hand making sure you get the root, the whole root and nothing but the root. Laborious task.
If you don't have that and can spare a few years. Cover the ground with something. It will have been severely weakened.
Weedkillers also work, but you will never eat of that patch again.

I've been fighting bindweed for several years now and come to the conclusion that you can't get rid of it, but only hope to contain it. As long as any part of the bindweed root is in the ground it will re-sprout. I've read that the bindweed roots can spread as far as 30 feet and as deep as 15 feet so it is next to impossible to remove it all. You can use round-up, but it could kill everything around it. Good luck your going to need it.

Bindweed can be killed effectively using liquid lawn weedkiller containing mecoprop. (Most of them do). Paint the weedkiller neat onto the leaves and the bindweed will die back to the roots. I used this techique to clear all of the bindweed from a privet hedge that started off more bindweed than privet.
Ground elder is more difficult. If you leave the tiniest bit of root behind, it comes back.

Ugh! I hate bindweed! It's gets everywhere! If you don't have any plants to worry about, Roundup works. If they're in a bed of flowers, try pulling them and then sprinkling Preen or the MIracle Gro version around. It will help keep those nasty weeds under control!

I'm no gardener but have cleared out some jungles in my time.
There's no easy way - pull every strand of the weed out by hand and try, if possible to trace it to the root then dig it out. Don't leave any bits in the ground. Then have a big bonfire!
