Living in Mexico yes some places do not serve Frijoles (beans) I do see a lot of places where they serve rice instead of beans. Both are healthy so eat and enjoy.

I dont know what part of Mexico you went to where they dont eat rice and beans.. that is ridiculous

I am from mexico and I can tell you rice, beans and tortillas (corn) are pretty much included in 90% of mexican dishes.. pico de gallo is also mexican.. everyone eats it with tacos

You want to know whats not mexican???
Nachos, Giant Burritos, sour cream, yellow cheese, black olives, chilli.. pretty much everything you see in Taco bell.. not even close to being mexican.

How do I know? I am mexican.. I eat rice.. I eat beans.. I eat chile and I hate american mexican food!
