Becuse sun helps dry them after wet. Also their inner body tissue help absorb some of the water too.

So unless you grow a layer of skin inside the leather shoes, or carry a dryer with you( both are not practical), otherwise, it's always good to go for the waterproofing products for your leather accessories/clothes.

Water is very drying to leather. The leather needs extra protection with a water shield of some type. Even then plan to reapply frequently. For just a few minutes exposure, they'll be fine but prolonged,make sure they are treated.

Oils on their skin slow down the absorption of water.

Once the cow's dead, it won't produce those oils anymore and so, leather will be susceptible to water.

And besides, not all of the leather we use comes from the top layer of skin.

Cows are living and their skin is being given a blood supply. Hopefully your shoes aren't.

They are alive and secrete natural oils through their pores, just like humans. But they are no more waterproof than you are, ever notice your skin after sitting in a hot tub ? Hands, feet ? But your skin is alive and can repair itself, your shoes cannot.

Cows/bulls are alive. While they are alive, their bodies produce natural oils which protect their skins. During the tanning process, these oils are removed, and cannot be naturally replaced.
