There are no real criteria. In the hotel bizz, you get a job that is assigned to you. You don't actually apply for Food and Beverage manager... Could happen but usually hotels that are big enough to have a F&B-manager shift personal internally... then hire a new dishwasher.. you get the idea.

The reason? You need a lot of knowledge of the hotel, who's who what channels to use, whats the hotels standard etc. etc.

Comming 'of the street' you would not know stuff like that and would mess up. A Hotel can not afford you to mess up so... Aim high start low.

The F&B Director of a hotel is ultimately responsible for the menu, as well as the preparation and service of all food and beverages (with or without alcohol) at the property. This includes budgeting and purchasing, as well as training cooks and servers. Depending on the size of the property, the F&B Director's staff may be too large to focus on every detail, so he or she may hire a restaurant manager, banquet manager and kitchen supervisor.

Getting into the hotel industry is pretty easy... of course, it's easier to get into food & beverage if you have some formal culinary training.

For more specific examples of how to get into F&B consult with the American Hotel & Lodging Association.
