The movies or the book?
IMO, the best chapters in the entire 6 books (yes, there are 6 books, sometimes grouped into the 3 volumes that the movies were named for), are chapters 2 (A Shadow of the Past) & 10 (Strider) of Book 1. The appendices were very interesting, as they provided the first real insight into the history of Middle Earth, before the publication of The Silmarillion.
The movies had many great scenes. Overall, the most thrilling had to be the combats in Moria in FotR, and the battle of the Pelennor in RotK. The passage through the Argonath (the statues on the Great River) was one of the most moving, as Aragorn looks upon his distance ancestors.

I'll cite two instances where the Lord of the Rings ruled. Both are Legolas.
In the first movie, Legolas (at the end) is firing arrows at orcs as fast as he can. One gets too close, and he takes the arrow he just removed from the quiver, and stabs the orc in the chest. He then proceeds to knock the arrow and shoot it at another orc.
In the third movie, the entire scene that Legolas brings down the Oliphaunt. More graceful than ballet, really. And then Gimli tells him that it only counts as one. Gimli's got all the best lines... lol

seeing Gollum naked.
Yes, I AM joking. Actually, my favorite part of the book was Faramir's cave behind the waterfall, but it didn't impress me in the movie. Probably the amazing giant statues on the river were the best scenery in the movie.

The whole adventure is amazing.
One of the best parts are all the memorable quotes in those movies. If you've seen them, you probably have your favorite quote. If you haven't seen these movies, you'll be quoting the movies years later.
Also, I happen to think that the battle scenes were done remarkably well.

Everything, but I'm particularly fond of Gandalf the Grey becoming Gandalf the white.
The ending, too.
