i have heard rumors that george lucas will put the last three chapters in the hands of another director he trusts. the movies are actually based off of books and my dad says George Lucas might entrust them to somebody like Steven Spielberg.

That was a rumor started years ago that Lucas has repeatedly denied. Basically, "Return of the Jedi" is, chronologically, the last movie in the series. To experience the later adventures of Luke, Han, Lei and others, I would suggest reading the novels and comic book tie-ins.
The good news is that this is not the end of Star Wars, however. Lucas did announce about a year or so ago that he was wanting to do a live action television series based on the movie saga. The movies would take place in between "Revenge of the Sith" and "A New Hope" and would involve all new characters.
As for when the show will premier, that won't be for some time yet. They are still working on the scripts and have not yet gotten even to the stage of casting yet. Obviously, as the series progresses, you (and the rest of the world) will hear much more about it.

Probably not. There have always been rumors of episodes 7,8, and 9, but Lucas made it clear he intends to make no more Star Wars movies.
