i think this person is very close to the answer
look salt contains magnesium chloride as an impurity. this makes the common table salt deliquescent ie it tries to take the water frm the environment. now when u put salt over raw mango, the moisture level over the surface drops and after some time the surfce becomes hard

howecer i would say that when u put salt over raw mango, it tastes wonderful

It will make the mango release its juices due to the natural tendency of water to move to an area of high solute to equilibrate the concentration. But I am guessing you are asking because you have seen people do this before? This is usually done to enhance the flavor/sweetness of fruit by adding a contrasting element to it (think salt on the outside of Sour Patch Kids gummy candies). With very high amounts of salt, it will dramatically dehydrate the fruit and you will have a "jerky".
