By far its Enter the Dragon....Yes the acting is hillarious, but the choreography of the fight
scenes by Bruce Lee are amazing. If you want to see how fast he actually was, slow down some of the fight scenes and see just how fast his punches and kicks were. A very young Bolo Yeung is featured (the large fighter who John Saxon defeats) - he would later be the bad guy in John Claude Van Damme's crappy Bloodsport.
All of Lee's movies feature terrific martial arts action, although the acting is not the best. Chinese Connection (also called Fist of Fury) is terrific, as is the last part of Game of Death (Lee versus Kareem - priceless!).
Of course, Bruce Lee is the greatest martial arts movie star - his charasma and screen presence, topped by unbelievable martial arts ability made him unique - and who knows what he would have done had he lived and made more then 5 films (plus the unfinished Game of Death).
Number 2 film I would put is The Octagon with Chuck Norris. The last third of the movie is just a terrific long fight sequence, ending with Norris versus Japanese master Tadashi Yamashita. I'd also recommend Return of the Dragon, featuring a great fight sequence between Norris and Bruce Lee in the Colosseum in Rome.
3. Jackie Chan - the master of comedy and martial arts - watch the Police Story series, Super Cop and The Legend of Drunken Master
4. Crouching Tiger, Hidden Dragon - a great film. some terrific sequences involving high wire and amazing camera work.
5. Jet Li - dynamic star - check out Shaolin Temple (his first film, when he was Wu Shu champion) and Fist of Legend (his best film - a remake of Bruce Lee's Chinese Connection)
6. Shaolin Master Killer - staring Gordon Liu - this is the loose story of the origins of Kung Fu - action by the truckload.
7. Seven Samurai - Kurasowa's masterpiece about the Japanese warriors - this is a great movie that inspired the Magnificent Seven - and has one of the greatest action sequence when the Seven defenders protect the village from 40 bandits
Ill give some credit to Sagal - yes his acting is wooden, but he does do a good job for an Akido master - an art form that does not translate well to the screen... and yes, Billy Jack movies are liberal tripe, but provide some entertaining fight scenes..
Just my humble opinion.

Not to dismiss Bruce Lee or Jackie Chan in any way, but I think Crouching Tiger counts as (at least) one of the greatest martial arts movies ever.
I would say Bruce Lee's unfinished film The Game of Death, but it was never completed (for the obvious reason). But I think the true meaning of Crouching Tiger was lost on American audiences. Ziyi Zhang is actually the main character of that film, and the story is about the studen/teacher relationship and lost opportunities. I think that just by reason of it's deepness, Crouching Tiger at least deserves to be counted among the best martial arts movies ever made.
And of course, the greatest martial arts movie star is Bruce Lee. Because if he lived, could you imagine what kind of stuff he would have put out?
Runner up is Jackie Chan, because he makes martial arts accessable to everyone without the gore that usually comes with such films.

My favorite movies would have to be Iron Monkey and Big Trouble in Little China.
Stars: I like Jackie Chan, but he is not really a practitioner of martial arts, he was trained in stage kung-fu. Jet Li, on the other hand, started training in martial arts as a child, and only much later became an actor. His first visit to the U.S., as a matter of fact, was as a member of the national chinese martial arts team when he was 8 years old.

Any movie with Donnie Yen. He does a lot of this mixed martial art fighting in his scenes. Very good choreographer! He was the martial arts director in Blade 2. He was the villian in Shanghai Knights with Owen Wilson and Jackie Chan. And in SPL, he fought the great Sammo Hung, UFC style!!! Recent movies: SPL (Sha Po Lung), Flash Point, and Seven Swords.

My two favorite martial artist are Jean Claude Van Damme and Chuck Norris. I love Kickboxer and Bloodsport, Chuck Norris' movies that I like were the "Missing in Action" sagas, there were 3.

Well, first of all, Chow Yuen-Fat has only made one martial arts movie, and he doesn't actually know martial arts
My favorites though- Jet Li, Bruce Lee, Leung Kar-Wan and Yuen Biao

Sonny Chiba's "The Street Fighter" is one of the most incredible martial arts movies ever made.
Jackie Chan in "Who Am I" or "First Strike".
Chow Yung Fat in "The Replacement Killers"
Jet Li in "The Black Mask" or "Romeo Must Die"

Enter the Dragon. Though cheesy at times and it's not the greatest technical film, it is the granddaddy of them all! It paved the way for all the rest.
All-time favorite martial arts movie star? Bruce Lee. Hands down. Not only the greatest martial arts movie star of all-time, but the greatest martial artists of all-time!
