Depends wether you are the one serving alchol or not. If you are bar tending and expected to mix and serve alchol I believe you must be 21. If you are simple greeting/waiting then you can be 18. Most bars/pubs have thier own standards and it can vary.

It should be 21 as the drinking age is 21. Over here in England, the drinking age is 18 so you have to be 18 to handle alcohol behind a bar.

It might be different by state. Here I believe it is 21 to serve alcohol. You might be able to dance in a bar at 18; but, I don't know for sure.

Michigan - 18 years to be a bartender

It will vary from state to state.

The idea of 18 is that you are old enough to be prosecuted for serving to underage drinkers.
