what is the best way to keep the birds from eating the fruit off my cherry trees?

The only way I know of is to use bird netting. Bird netting is made to prevent birds from being able to fly inside your tree branches. This may work better if your tree is a dwarf where you are actually able to get it on your tree. It may not be practical if your tree is very large but it does come in different sizes and at least if you can cover a section then that leaves some cherries for you. I would look at Lowe's or Home Depot, or a nursery for the netting.

Very difficult. We have a beautiful black cherry tree that produce large fruit each year. In 5 years, we have yet to enjoy one cherry, because the squirrels devour them a few weeks before they ripen. Can't remove them early, they'd simply rot. The birds eat whatever's leftover. Our dwarf tree is so healthy that it's too big for netting, so (short of getting a dog or a trap), we've given up
