When you cut your yam in half, place the cut end barely in the water, by suspending it using toothpicks. When it grows little stems straight up, you'll wait till you see about three knobbies (which will be leaves) before you cut these "slips" off. Then take the slips and place them in water, till they root.
Then they are ready to be planted either in the garden, or in 4" pots till they grow bigger, and then transplanted.
Here is a website that describes in full the above method, and several other methods as well.

The 'eyes' are where the plants will start growing from. Best to let them sit in the dark for a period of 2 weeks and then cut them and place then in a small dish of water.. You don't really have to do the toothpick thing. Just make sure you don't let them dry out. Make sure they get plenty of sun though. Soon enough you will have a nice vine.

one plant will make a good size plant. ENJOY!

Believe it or not...I had one growing on my kitchen counter without any water. It started to sprout and continued for weeks without water. Evidently it has enough moisture inside for it to survive on its own. It had leaves and vined itself. (Near a window with light helps) It was quite interesting and pretty if I say so myself. By the way if you plant it in the ground (any potato) you cut it in half and position the cut side "down". Now you can have 2 plants.

I use the WHOLE sweet potato. I suspend the potato, using toothpicks, so that about half is above the water and half below.
the roots will grow below the waterline and the plant above. remember to add water.

It has been my experience that they will grow without cutting them at all, especially if they are already beginning to sprout.so either end should be OK.
