I buy Fall Out Boy songs from iTunes, and so far I have:

Now I need to know what other songs are a 'must have'!
I'm thinking about getting Sophmore Slump... or Snitches and Talkers... and I've heard that Grand Theft Autumn is good - but what do you think?
And don't leave any rude remarks about Fall Out Boy! I like them, and if you don't then you can just stfu and answer another question!
(Oh, and what songs do they typically play in concert? if you know, that would be nice - I've always wondered!)

Well to be honest, I would say every song from Fall Out Boy is a must have. Just not the first record, unless you're a BIG fan like me. You won't even believe it's them singing...haha! Get the whole record Take This To Your Grave. It's even better than From Under The Cork Tree. It's absolutely amazing. Best cd I've ever heard. It's one of those cds where you never skip a song. LOVE! Uhh..From Under The Cork Tree...my favorite song is XO!!! O MY GOSH! It's my favorite song EVER! If you listen to the beginning in one head phone...it's just patrick's voice. It's beautiful. O my gosh...I have to listen to it now, now that I think of it. LOL! Uhh...if you decide to download the EP cd....My Heart Will Always Be The B-Side Of My Tongue...buy it! That way you get the free dvd with it. It's good. It's funny too. Uhh...so yeah. I hope I helped, and trust me when I say to get XO and all of Take This To Your Grave, you won't regret it. Get all of Take This To Your Grave and get My Tongue Will Always Be The B-Side To Your Tongue-it's the acoustic album and it's AMAZING.
So "Grand Theft Autumn" is also good. but Take This To Your Grave is much more punk than From Under The Cork Tree, but it really depends on your style.
Sophomore Slump or Comeback of the Year is an amazing song it should have been their other single but they didn't.
If you're a real fan get al their albums like I did even the split EP with Project Rocket....But that's really more punk than all of their other stuff.
Well that's just my opinion I would suggest over time get all of the albums, if you are a real fan.
