Every time I wipe them or get drops of water on them it leaves marks.

get a stainless steel specific cleaner. it's meant to remove the things that leave stainless unsightly, it also helps protect it from those things later.... you wouldnt use windex on your antique cherry armoire would u?

I went to Walmart and purchased Stainless steel wipes. They are kept in the same aisle as the dish soap, mops, and such.
They are great. They clean and shine. I usually wipe then buff with a paper towel. It also seems to repel the water spots for a few days after I use them too.

That snazzy Mr. Clean Magic Eraser takes the marks off of stainless. And everything else, for that matter.

Other than not touching them, try using a leather chamois, like the ones they use to dry a car after its washed.

I use regular cooking flour on a damp dish cloth it gets the nasty spots out
