you are going to need about 5 or 6 for desk staff (3 full time, 3 part time) and depending on whether you want housekeeping fulltime or not I'd say about 10, plus at least 1 manager for each department. With 240 rooms you may need additional staff for busy seasons. AKA 2 desk clerks for AM and PM shifts on weekends and during the busy season, also a few extra housekeeprs during those times. Also consider 2 mainteance personel 1 FT and 1 PT. More employees will be needed if you have things like a pool, restaurant and such. I'd say Approx 30 employees.

My mother is the Executive Housekeeper for a hotel in Kansas (255 rooms) and has the largest confrence/banquet area in the state. And they have about 71 people on staff total.
Houskeeping & laundry dept. have 21 employees. Maintenance - 7 full-time, 2 part-time. Banquet - 10-15. Front Desk has 3 shifts, 2 staff each. Sales staff - 8. Club- 5. Managers-8. Kitchen-7.

That's not including calling in temps for banquet and housekeeping, when schedule is more hectic.

It all really depends on the amenities or services your hotel has to offer. And what kind of service you want your guests to experience.
