Usually there are two kinds of tea served - green tea or black tea. If you're a regular at the restaurant and the owner/manager knows you, you can always ask if they will sell you some. You should be able to go to an Asian grocery store and buy it, if you live in a relatively large city. Some larger grocery stores or places like Whole Foods have these sorts of specialty teas. Finally, you can search online for "Chinese Tea" and buy off the internet. (I have not done this before.)
If you're talking about the flower teas that are served, then you definitely need to talk to the manager or find an Asian grocery.
Hope that helps.

When you go to a Chinese restaurant, they usually serve either oolong or Jasmine tea. Many dimsum place, you can actually request your tea, such as chamomile, or jasmine or others. Yes, you can buy it at many store, event Safeway has a little Asian food section, and you can get the tea from them. However, I would recommend a store call "Ten Ren Tea" that has all kind of Chinese tea available. They have many locations in the bay area too.

The Chinese restaurants in my area serve a blend of jasmine-green, oolong, and black tea that is very aromatic and never bitter. I have found a great home version in Dynasty's "Chinese Restaurant Tea" which is available at many asian markets and even most supermarkets like Vons and Albertson's. It's usually about $3 a box.

Chinese restaurants usually serve either Oolong or Jasmine tea if they don't ask what type of tea you would like. Many dim sum places, you can actually request your tea, such as chamomile, chrysanthemum, or jasmine or tea blends.
You can find most of the teas in Asian markets. Safeway also has a little Asian food section, and you can get the tea from them. If you go to a specialty tea place, like Ten Ren, you will find many other varieties.

Not necessarily green tea. That is usually Japanese. In San Francisco you can go down to Chinatown and get restaurant quality Chinese tea there. Go ask what they buy for the dinner crowd!
