Are you referring to booking the cruise or once you are onboard?
As far as booking the cruise, I believe most cruise lines don't accept checks for payment, only credit cards. You would have to call around to see if any lines accept a check for payment. Otherwise, you will want to work with a travel agency that will allow you to pay with a check and then they pay for your trip with a credit card.
Once you are onboard the ship, you need to give them cash for your oboard credit account. If you get in a promotion with a travel agent, you may receive some onboard credit so this may not be needed.

Yes you can you need to pay a certain amount of money upfront and they will issue you a cruise card onboard with that amount of money to use and spend until you reach your limit, check with each individual cruise line for the amount they require tho.

Yes. When you first get onboard the ship, you will have to go to the pursers desk and give them cash to cover your sign and sail expenses. Onboard, they use a cashless system so whenever you buy something, they swipe your sail and sign card. Once your sign and sail expenses reach the amount of cash deposit you gave the purser, you will have to give them more cash. On the last day of the cruise, you will have to go back to the pursers desk to get a refund of any money you have left over.

Yes, you will have to put a lot of cash down on your on-board account when you get there and you can send in a check when you reserve the trip. I would recommend going to some cruise line websites and research it.

you can leave a cash or check deposit. you would have a cruise card limit of the amount you deposit. usually $200
