Write a letter and inform them that you have just received a better offer. Thank them for their hospitality and time and wish them well in finding a suitable alternative person to fill the position.
A good manager will not fault you for bettering your situation and will be gracious for you notifying them in a timely fashion. Many others just wouldn't show up and that really leaves a bad taste.

Call them, first then send a thank letter and the retract with an excuse.....
Polite can be for personal reasons you don't have to explain.
But always live the door open ending the letter with I will hope in the future blablabla ( I want to keep in touch with you for if they need you). As soon as better....

Go in and talk to the person who hired you. If you accepted a while ago and signed a paper, they may have started the paperwork. The sooner you tell him the better.

letter. simply state that you are intrigued by the offer you got but have found another that will yield you better expereince or more along your line of work. whatever you do, you'll be treating them a lot better than they would you had you not been offered the position.

speak to the person who offered the position. politely thank them for the opportunity, but however its not a good fit for you. they will understand. they have been rejected before. after speaking to someone, i would follow up with a letter again stating thanks for considering you for the position.
