Composite video attached to a LCD screen TV will give you the best look. The Composite video cable will split the colors into red, blue, green and will also allow you to have stereo sound with the yellow and white cables. You will get the best color and the best sound. The cable is sold separately at places like Game Zone and Best Buy. Should cost you between $15 and $20.

Honestly, just upgrading to the LCD TV should do most of the magic for you. If you're really eager to maximize your PS2's output, you could upgrade from a component video cable to an s-video cable (available all over the place, I saw at least 2-3 models on buy.com), but the difference would likely be tough to notice. If you really want to show off the power of the new TV, get an XBOX 360 (or just wait for the PS3). Because these new-generation TVs weren't available to the average consumer when the XBOX and PS2 came out, the hardware consoles don't have the output (essentially video cards) to really take advantage of the benefits of high powered TVs.
