If you like "green tomatoes", pick them when they are large enough to fry.
From a favorite gardening site:
Harvesting
Pick tomatoes when they just begin to change from orange to red. Gently twist the fruit off while holding the vine, then let the tomatoes finish ripening at room temperature out of direct sunlight. Don't store them in your refrigerator because the cold temperature will cause them to lose flavor and texture.

Wait until they are completely red unless they are in danger of frost or freezing. If that is the case you can pick them before they are totally red and they will continue to ripen off the vine.

Once they turn nice and red (unless you want tomatoes that taste like the ones you get from the store)

You can pick them when they are just turning light red and put them in your kitchen window sill to complete ripening.
