Some of them, the most devoted, do keep jerseys, trophies, and other important stuff from games. I've heard they all have a space at home where to have all that at safe. That game is their lives, why would they trash or give away a jersey previously exchanged with another player? What is the point of exchanging, after all? It's not mandatory; it's become a tradition, so far.
But I guess you are going to have to ask the captains, not us the fans.

Its not just captains that exchange jerseys, goal scorers (and other players) do that too. You kinda of keep it as a memoribilia. One commentator was talking about how he had just kept jerseys from goal scorers.
